Ingredients:
- 1 cup coarsely chopped toasted almonds
- 0.5 cup dried cherries, coarsely chopped
- 170 g dark chocolate, finely chopped
Preparation:
- Line a baking sheet with waxed paper.
- Melt half the chocolate in a double boiler over simmering water over low heat, stirring frequently. Make sure the water doesn't touch the top bowl. Remove the boiler from the heat and stir in the remaining chocolate. Remove the top bowl of chocolate, gently wipe it clean, and set aside for a moment. Replace the simmering water in the bottom pan with warm tap water. Place the bowl of melted chocolate over the warm water. This will help maintain the chocolate's temperature while you prepare the candies.
- In a medium bowl, combine the almonds and cherries. Stir the fruit and nut mixture into the chocolate. Drop 1 tablespoon of the chocolate mixture into mounds on a baking sheet, spacing them about 2.5 cm apart. Refrigerate for 15 minutes. Store and serve at room temperature.
