Ingredients:
- 1 cup sweet coconut flakes
- 110 g butter, diced
- 0.5 tsp brown mustard seeds
- 1/4 tsp ground coriander
- 1/4 tsp hot smoked paprika
- 1/4 tsp ground turmeric
- 1/8 tsp garlic powder
- 1/8 tsp ground ginger
- 1/8 tsp onion powder
- 2 tablespoons of vegetable oil
- 0.5 cup popcorn
Preparation:
- Preheat oven to 175°C.
Spread the coconut flakes on a rimmed baking sheet and bake, stirring halfway through, until golden brown, about 8 minutes. Set aside to cool.
- Meanwhile, melt the butter in a small saucepan and add the mustard seeds, coriander, paprika, turmeric, garlic powder, ginger, and onion powder. Cook until the butter is fragrant and the spices are toasted, about 1 minute. Turn off the heat.
- Heat vegetable oil in a large saucepan over medium heat until shimmering. Add the corn kernels and stir to coat evenly, then cover the pan with a lid. Cook, shaking the pan occasionally, until the popping noise stops, about 5 minutes.
- Place the popcorn in a large bowl, drizzle with the spiced butter, and sprinkle with 1 teaspoon of salt. Add the toasted coconut and stir to evenly distribute the ingredients. Serve the popcorn warm.
