Ingredients:
Cauliflower
- 1 head of cauliflower
- 1/4 cup olive oil
- 2 tsp mustard powder
- 2 tsp smoked paprika
For honey mustard
- 1/4 cup yellow mustard
- 1 tbsp. grainy mustard
- 1 tbsp. honey
To assemble a sandwich
- 4 tbsp (60 g) salted butter, room temperature
- 8 slices sourdough bread
- 240 gr. Butterkese or Gruyère cheese, grated
- 2 pears, thinly sliced
Preparation:
- Prepare the cauliflower: Preheat the oven to 230°C (430°F). Trim the cauliflower, place the head cut-side down, and slice into 1-cm-thick slices. In a small bowl, combine the olive oil, mustard powder, paprika, and a pinch of salt and pepper. Brush the cauliflower slices with the herb oil. Place them on a baking sheet and roast in the oven for 10 minutes. Carefully flip the cauliflower, return it to the oven, and roast until golden brown, another 10-12 minutes.
- Meanwhile, prepare the honey mustard: In a small bowl, combine yellow and grainy mustard, and honey. Season with salt and pepper.
- To assemble the sandwich: Melt 2 tablespoons (30 g) butter in a griddle over medium-low heat. Spread honey mustard on 4 slices of bread and top with cheese, roasted cauliflower, pear slices, more cheese, and another slice of bread. Place 2 sandwiches on the griddle and cover with a metal bowl. Grill until golden brown and crisp on the outside and gooey in the middle, 4 to 5 minutes per side. Add the remaining 2 tablespoons (30 g) butter to the griddle and grill the remaining sandwiches in the same manner. Serve with the remaining honey mustard.
