Fried Corn "Confetti"

Ingredients:

  • 2 tbsp. l. olive oil
  • 0.5 cup chopped red onion
  • 1 small orange bell pepper, diced into 1cm cubes.
  • 2 tbsp (30 g) butter
  • Corn kernels, cut from 5 ears of yellow or white corn (4 cups)
  • 1.5 tsp coarse salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons thinly sliced ​​fresh basil, chopped fresh chives, and/or chopped parsley leaves

Preparation:

  1. Heat olive oil in a large skillet over medium heat. Add the onion and sauté for 5 minutes, until softened. Add the bell pepper and cook for another 2 minutes.
  2. Add butter to the pan and melt. Cook over medium heat, add corn, salt, and pepper, and cook, stirring occasionally, for 5-7 minutes, until the corn loses its starchiness. Season with salt to taste, gently stir in basil or other herbs, and serve hot.
