Pizza with minced meat and onion jam in a frying pan

Ingredients:

    Filling

  • 8 tbsp. l. olive oil
  • Lamb sausage, see below
  • Onion jam, see below

    Basic pizza dough

  • 2 and 1/4 teaspoons active dry yeast
  • 1.5 cups warm water (approximately 43°C)
  • 3.5 cups premium flour + extra for working with the dough
  • 2 teaspoons coarse salt
  • 0.5 tsp ground white pepper
  • 1 incomplete tablespoon of honey
  • 1 tbsp olive oil + extra for greasing

    Lamb sausage and onion jam

  • 1 tsp olive oil + extra for drizzling
  • 350 g raw hot lamb sausage, casings removed
  • 2 small red onions, peeled and thinly sliced
  • 0.5 tsp honey
  • 1 cup diced mozzarella
  • 0.5 cups basil leaves without stems, washed and dried

Preparation:

  1. Preheat oven to 175°C.
  2. In a cast-iron skillet large enough to fit 1 round pizza, heat about 2 tablespoons of olive oil. When the oil begins to smoke lightly, turn off the heat and add 1 circle of pizza dough. Press lightly with a spatula to ensure it stays flat while frying. When the dough is lightly browned on the bottom, sprinkle it with a little salt and pepper and flip it over. Season with salt and pepper, top with the meat and onion filling, and place the skillet on the middle rack of the oven to finish cooking, 5-8 minutes. Repeat with the remaining dough and toppings.
  3. Lamb sausage and onion jam: In a medium skillet, heat the olive oil over high heat and cook the sausage meat, breaking it up into small pieces, until browned.

    Using a slotted spoon, transfer the ground meat from the pan to a plate lined with paper towels. Add the onion and cook over medium heat until caramelized, 3-5 minutes. Stir in the honey.

    Spread caramelized onions on pizza dough, top with mozzarella, sausage, basil and drizzle with olive oil.

    Note

    Pizza topping tip: Brushing the dough with olive oil will create a barrier that will help prevent the toppings from making the pizza crust soggy.

  4. Basic pizza dough


    In a large bowl, combine the yeast and warm water. Stir and let the mixture sit for 5 minutes.

    Sift about half the flour into the yeast mixture and knead it with your hands until smooth. Add salt, pepper, and honey and mix well. Sift the remaining flour and knead it into the dough.

    Lightly flour a cutting board or flat work surface. Turn the pizza dough out onto the floured surface and knead for 3-5 minutes. Make sure all the ingredients are fully incorporated and the dough is smooth. Place it in a large bowl lightly greased with olive oil. Cover with plastic wrap and let it rise in a warm place for about 1.5 hours, or until the dough doubles in size.

    Gently press the dough into a flat shape and turn it out onto a floured surface. Divide the dough into 4 equal portions, shaping each into a ball. Cover with a clean kitchen towel and let the dough rest for another 15 minutes. Flatten each ball, one at a time, and roll it out into a 15 cm (6 in) circle. Place each circle in a single layer on a lightly oiled baking sheet.
