Classic crispy Belgian waffles

topcook.tomathouse.com

Ingredients:

  • 2 cups of flour
  • 2 tbsp. granulated sugar
  • 1 tbsp baking powder
  • 1 teaspoon fine salt
  • 1.5 cups of milk
  • 4 tbsp melted butter + extra for greasing the waffle iron
  • 4 tbsp margarine, melted
  • 2 large eggs
  • Maple syrup, soft butter, powdered sugar or fruit jams for serving
  • Special equipment: waffle iron

Preparation:

  1. Preheat the waffle iron to medium heat. Preheat the oven to 90°C (195°F) (to keep the finished waffles warm). In a large bowl, combine the flour, sugar, baking powder, and salt. In another bowl, whisk together the milk, butter, margarine, and eggs. Pour the milk mixture into the flour mixture and gently mix until smooth (it's okay if there are a few lumps in the batter).
  2. Lightly grease the top and bottom of a waffle iron with butter. Fill the iron about three-quarters full with batter (some waffle irons have markings). Close the lid and cook until the waffles are golden brown and crispy, 6-7 minutes. Place the finished waffles on a plate, cover with foil, and keep in the oven while you cook the rest.

Serve waffles with maple syrup, butter, powdered sugar or jam.

    Note

Waffles can be frozen in a zip-lock bag for up to 1 month. Before serving, reheat in a toaster oven or a regular oven at 150°C until crispy.
