Deep-fried beer-battered zucchini spirals topcook.tomathouse.com
Ingredients:
- 250 g zucchini (1 - 2 small fruits)
- 1.5 cups of flour
- 350 ml of lager
- 1 teaspoon lemon zest
- Vegetable oil for deep-frying
- Special device: spiral vegetable cutter, deep-fry thermometer
Preparation:
- Using the widest side of a vegetable peeler, slice the zucchini into strips. Stop after every second turn, making sure the strips are no longer than 5–7 cm.
- In a medium bowl, whisk together the flour, beer, lemon zest and 1 teaspoon salt.
- Pour 5 cm of vegetable oil into a large cast-iron skillet and heat it over medium heat to 190°C. Line the baking sheet with a double layer of paper towels and place it next to the stove.
- Take a small handful of zucchini at a time and drop them into the batter. Use tongs to toss them (like spaghetti in sauce). Then, lift a few curls with tongs. Let any excess batter drip off and carefully place them in the hot oil.
- Using another pair of tongs or a slotted spoon, stir the zucchini, separating the strips as thoroughly as possible. Fry on both sides until golden brown, 2–3 minutes. Then transfer to a paper towel-lined baking sheet. Continue frying the zucchini in small batches. Serve hot. If necessary, the snack can be heated in the oven at a temperature 160°С.
