Ingredients:
- 16 new potatoes, approximately 1.3–1.8 kg, boiled and cut into 1.5 cm thick slices.
- 1.5 cups mayonnaise
- 1/4 cup Dijon mustard
- 2 tablespoons lime juice
- 2 tablespoons pureed chipotle peppers
- 1 large ripe tomato, diced
- 1/4 cup chopped cilantro leaves
- 3 green onions, chopped (white and green parts)
- 1 medium red onion, thinly sliced into half rings
- 0.5 tsp cayenne pepper
- 4 cloves garlic, finely chopped
Preparation:
- In a medium bowl, combine all ingredients except potatoes, season with salt and pepper to taste.
- Place the warm potatoes in a large salad bowl and pour over the prepared mayonnaise dressing and mix well. Season with salt and pepper to taste.
