Grilled chicken breast with marinated cherry tomatoes

Ingredients:

    Grilled chicken

  • 2 chicken breast fillets, boneless and skinless
  • 3 tbsp. l. olive oil
  • 5 torn basil leaves
  • 1 clove garlic, sliced

    Marinated cherry tomatoes

  • 2 cups cherry tomatoes
  • 2 tsp coriander seeds
  • 1/4 red onion, thinly sliced
  • 5 tbsp. l. olive oil
  • 2 tablespoons ginger juice
  • 2 tablespoons thinly sliced ​​basil leaves
  • 1 tbsp. finely chopped mint leaves
  • 1 tbsp sherry vinegar
  • 1 crushed clove of garlic

Preparation:

  1. Prepare marinated cherry tomatoesToast the coriander seeds in a small skillet over medium heat for 3-5 minutes, until fragrant. Transfer to a mortar and pestle. Let cool.
  2. Bring water to a boil in a medium saucepan. Make a small "x" cut into the bottom of each tomato. Blanch the cherry tomatoes for 1 minute and immediately transfer them to a large bowl filled with ice water (ice bath). Let them cool, then peel and discard the skins.
  3. In a medium bowl, combine the cilantro, peeled tomatoes, onion, olive oil, ginger juice, basil, mint, vinegar, and garlic. Season with salt and pepper, cover, and let the marinated tomatoes sit at room temperature for 4 hours.
  4. Prepare grilled chickenCombine the olive oil, basil, and garlic in a large bowl. Add the chicken breasts, making sure they are completely coated with the marinade on all sides. Cover and marinate in the refrigerator for at least 2 hours.
  5. Preheat the grill to medium. Remove the chicken from the marinade and pat dry with a towel. Season with salt and pepper. Place the chicken breasts on the grill and cook for 5 minutes per side, depending on how hot your grill is, or until cooked through.

    Serve grilled chicken with marinated tomatoes on top.
