Ingredients:
Ribs
- 1.5 kg. lamb ribs
- 3 tsp dried oregano
- 2 tsp ground cumin
- Finely grated zest of 1 lemon
- 1/2 tsp fine salt
- 2 tbsp. l. olive oil
Sauce
- 60 g finely crumbled feta cheese
- 1/4 cup chopped mint leaves
- 1/2 tsp garlic powder
- 200 gr. low-fat yogurt
Preparation:
- Preheat oven to 300°F (150°C). Place a baking rack on a baking sheet. Place the first six ingredients in a bag and mix thoroughly.
Spread the ribs evenly in a single layer on the rack and roast for 1 hour 30 minutes, or until cooked through. Check the ribs for doneness after 1 hour 15 minutes, as cooking time will vary depending on their size.
- To make the sauce, combine the last four ingredients in a saucepan and let it simmer and infuse with flavors.
- Serve the lamb ribs hot with yogurt sauce.
