Ingredients:
Marinade
- 1.5 cups coconut milk
- 1/4 cup peanut butter
- 2 tablespoons lime juice
- 1/4 cup soy sauce
- 4 finely chopped garlic cloves
- 2 chilli peppers, seeded and finely chopped
- 2 tbsp. cilantro
- 700 g pork tenderloin, cut into 2.5 cm cubes
- Wooden skewers
Sauce
- 1 tbsp. vegetable oil
- 1/2 cup finely chopped onion
- 2 finely chopped garlic cloves
- 1 finely chopped red chili pepper
- 1/4 cup soy sauce
- 2 tablespoons lime juice
- 1.5 cups coconut milk
- 1 teaspoon ground coriander
- 1 tsp cumin
- 1 cup peanut butter with chopped nuts
- 1 tbsp finely chopped cilantro
Preparation:
Prepare the marinade: Mix all ingredients in a small bowl, add pork and leave to marinate for 2-4 hours.
Prepare the sauce: Heat oil in a frying pan and add the onion, garlic, and chili. Sauté for about 4 minutes. Mix in the soy sauce, lime juice, coconut milk, coriander, and cumin. Stir in the peanut butter thoroughly. Bring the sauce to a simmer over low heat, stirring constantly. Add the cilantro and remove from heat.
Preheat the grill. Remove the pork from the marinade and thread onto skewers. Grill for 7-8 minutes, until cooked through. Serve with the sauce.
