Thai Pork Satay

Ingredients:

    Marinade

  • 1.5 cups coconut milk
  • 1/4 cup peanut butter
  • 2 tablespoons lime juice
  • 1/4 cup soy sauce
  • 4 finely chopped garlic cloves
  • 2 chilli peppers, seeded and finely chopped
  • 2 tbsp. cilantro
  • 700 g pork tenderloin, cut into 2.5 cm cubes
  • Wooden skewers

    Sauce

  • 1 tbsp. vegetable oil
  • 1/2 cup finely chopped onion
  • 2 finely chopped garlic cloves
  • 1 finely chopped red chili pepper
  • 1/4 cup soy sauce
  • 2 tablespoons lime juice
  • 1.5 cups coconut milk
  • 1 teaspoon ground coriander
  • 1 tsp cumin
  • 1 cup peanut butter with chopped nuts
  • 1 tbsp finely chopped cilantro

Preparation:

  1. Prepare the marinade:


    Mix all ingredients in a small bowl, add pork and leave to marinate for 2-4 hours.
  2. Prepare the sauce:


    Heat oil in a frying pan and add the onion, garlic, and chili. Sauté for about 4 minutes. Mix in the soy sauce, lime juice, coconut milk, coriander, and cumin. Stir in the peanut butter thoroughly. Bring the sauce to a simmer over low heat, stirring constantly. Add the cilantro and remove from heat.
  3. Preheat the grill.


    Remove the pork from the marinade and thread onto skewers. Grill for 7-8 minutes, until cooked through. Serve with the sauce.
