Protein bars with apples

Ingredients:

  • Cooking spray
  • 1 cup chopped dried apples
  • 1 cup chopped raw walnuts
  • 1 cup chopped raw almonds
  • 1/2 cup blanched almonds, sliced
  • 1/4 cup flaxseed flour
  • 1/4 cup puffed millet muesli
  • 2 tablespoons raw hemp seeds
  • 1 tbsp raw organic rice protein
  • 1 teaspoon ground cinnamon
  • 1/8 tsp salt
  • 1/4 cup brown rice syrup
  • 1/4 tbsp. maple syrup

Preparation:

  1. Preheat oven to 350°F (160°C). Spray an 8 x 8 inch baking pan with cooking spray. Line with parchment paper, leaving an overhang to make removing the bars easier.
  2. In a large bowl, combine the apples, walnuts, chopped and sliced ​​almonds, flaxseed meal, puffed millet, hemp seeds, egg white powder, cinnamon, salt, rice syrup, and maple syrup. Stir until evenly combined. Transfer the apple mixture to the prepared pan. Using the greased overhang of the parchment paper, press the mixture firmly and evenly into the bottom. Bake until firm, about 12 minutes. Cool completely on a wire rack.
  3. Reduce oven temperature to 120°C (250°F). Line a rimmed baking sheet with parchment paper and place a wire rack on top. Remove the apple mixture from the pan and cut into 12 bars. Place them on the rack, gooey side up. Bake for about 15 minutes, until the protein bars are almost dry to the touch. Cool completely on the rack.
