Black and white cake

Ingredients:

    Cake

  • 165 g butter, plus extra for greasing the pan
  • 3/4 cup cocoa powder, plus more for dusting the pan
  • 1 cup whole milk
  • 1.75 cups granulated sugar
  • 2.25 cups of premium flour
  • 1/2 tsp baking powder
  • 1/2 teaspoon of baking soda
  • 1/2 tsp salt
  • 3 large eggs
  • 1 teaspoon vanilla extract

    Cream

  • 225g chopped white chocolate, plus grated chocolate for sprinkling
  • 330 g of butter at room temperature
  • A pinch of salt
  • 2.5 cups powdered sugar
  • 1.5 tsp vanilla extract
  • Grated dark chocolate for sprinkling

Preparation:

  1. Preheat oven to 160°C. Grease two 20cm round cake pans with butter and dust with cocoa powder, removing any excess.
  2. Make a cakeIn a saucepan, combine the butter, milk, and 1/2 cup water and bring to a boil. Pour into a large bowl, add the cocoa and granulated sugar, and mix until smooth. Let cool slightly for 5 minutes.
  3. In a medium bowl, combine the flour, baking powder, baking soda, and salt. Add the eggs and vanilla to the cocoa mixture, then fold in the flour mixture in two additions, blending the ingredients thoroughly (small lumps may remain). Divide the batter between the prepared pans. Tap the pans on the counter to remove any air bubbles.

    Bake for about 35 minutes, until a toothpick inserted into the center comes out with a few moist crumbs. Cool in the pan for 10 minutes, then run a knife around the edges and invert the cakes onto a wire rack to cool completely.
  4. Prepare the creamPlace the white chocolate in a microwave-safe bowl. Heat, stirring, in 30-second intervals until smooth; let cool. In a large bowl with a mixer on medium speed, beat the butter and salt for about 3 minutes. While whisking, fold in the melted white chocolate. Gradually beat in the powdered sugar until light and smooth. Stir in the vanilla. (If the cream is too soft to spread, refrigerate it for about 15 minutes.)
  5. Place one cake layer on a plate and spread 1/3 of the frosting over it. Place the second cake layer on top and spread the remaining frosting over the entire cake. Sprinkle with grated white and dark chocolate.
