Green Apple and Ginger Chutney

Ingredients:

  • 450 g green apples, cored and cut into small cubes
  • 1 ginger root (15 cm), peeled, thinly sliced ​​into strips
  • 2 tbsp. l. rapeseed oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon fennel seeds
  • 1 medium red onion, thinly sliced
  • 1 tsp. homemade garam masala seasoning, see recipe below
  • 1/4 - 1/2 tsp cayenne pepper
  • 1/2 cup sugar
  • 2 tablespoons apple cider vinegar

    Homemade Garam Masala Seasoning

  • 3 large cinnamon sticks
  • 3 tablespoons whole cloves
  • 1/4 cup green cardamom pods, peeled and discarded (about 2 tablespoons seeds)
  • 4 large black cardamom pods, peeled and discarded (about 1 tablespoon seeds), optional

Preparation:

  1. Heat the canola oil in a medium saucepan over medium-high heat. When the oil begins to shimmer, add the cumin and fennel seeds and cook for about 30 seconds.

    Add the onion and cook, stirring frequently, until the onion is golden, about 10 minutes.

    Now add garam masala and cayenne pepper and fry, stirring vigorously for about 30 seconds.
  2. Add the apples, ginger, sugar, apple cider vinegar, 2 teaspoons salt, and a generous amount of ground black pepper; stir and cook until the sugar melts. Continue cooking, stirring frequently, until the sugar thickens and caramelizes and the apples soften, about 15 minutes.

    Taste the chutney and serve.
    Exit: 1.5 tbsp.

    Homemade Garam Masala Seasoning:

    In a spice grinder or coffee grinder, combine the cinnamon sticks, cloves, green cardamom seeds, and black cardamom seeds and grind into a powder. Store the spice mixture in an airtight container away from direct sunlight.
