Caesar Salad Dressing with Yogurt topcook.tomathouse.com
Ingredients:
- 3/4 cup 2% yogurt
- 2 tablespoons lemon juice (about 1 lemon)
- 1/4 tbsp. grated parmesan
- 5 anchovies
- 1 tbsp. l. olive oil
- 1 tbsp mustard
- 1 small clove of garlic, chopped
- 1/2 tsp dried oregano
- Coarse salt and freshly ground black pepper
Preparation:
- In a blender or food processor, combine yogurt, lemon juice, Parmesan, anchovies, olive oil, mustard, garlic, oregano, 3/4 teaspoon salt, and 1 teaspoon pepper until smooth.
- Cover and chill for at least 30 minutes. The dressing will keep in the refrigerator for up to 3 days.
