Watermelon Margarita

Ingredients:

    Cocktail

  • 4 slices watermelon 2.5 cm thick and small pieces for decoration
  • 1 cup of water
  • 110 grams of Blanco Tequila
  • 30g jalapeño simple syrup, recipe below
  • Juice of one lime
  • 30 gr. bitter watermelon schnapps
  • Whole jalapeño peppers for serving

    Jalapeño Sugar Syrup

  • 1 cup of water
  • 1 cup of sugar
  • 1 small jalapeño pepper, cut in half

Preparation:

  1. Preheat grill to high heat.

    Lightly brush the watermelon wedges with vegetable oil and season with salt. Place the slices on the grill and cook until they have visible grill marks on both sides.
  2. Peel the watermelon and cut it into large chunks. Place the watermelon pulp in a blender, add 1 cup of water, and blend. Strain the juice through a fine sieve into a bowl. Discard the fibers and seeds, leaving only the watermelon juice.
  3. In a large bowl or glass pitcher, combine tequila, simple syrup, lime juice, and watermelon schnapps. Add the watermelon juice and stir. Pour into glasses and serve with reserved grilled watermelon slices and jalapeños.

    Jalapeño syrupPlace a small saucepan over medium heat, add water, sugar, and jalapeño pepper. Heat the mixture until the sugar dissolves, about 2-3 minutes. Remove from heat and let cool. Remove the pepper pieces, reserving the syrup.
