Brownie cookies with dried fruits topcook.tomathouse.com
Ingredients:
- 0.75 cups dried fruit (raisins, dried apricots, dried pears), cut into large pieces
- 110 g butter
- 50 g chopped unsweetened chocolate
- 1 cup semi-sweet chocolate chips
- 1.25 cups premium flour
- 0.5 tsp baking powder
- 0.5 tsp salt
- 2 large eggs
- 0.75 cups granulated sugar
- 1 teaspoon vanilla extract
- Powdered sugar for sprinkling
- 3 tbsp. brandy
- 3 tbsp rum
Preparation:
- Combine brandy, rum, and dried fruit in a microwave-safe bowl. Heat for 1-2 minutes and let steep for 20 minutes.
- Meanwhile, melt the butter, unsweetened chocolate, and chocolate chips in a saucepan over medium heat, stirring until smooth; let cool for 10 minutes. Combine the flour, baking powder, and salt in a medium bowl.
Combine the eggs, granulated sugar, and vanilla in a large bowl with a wooden spoon. Add to the chocolate mixture and mix well. Add the flour mixture and mix vigorously until smooth. Stir in the soaked dried fruit (including the liquid). Cover the dough and refrigerate until slightly firm, about 1 hour.
- Position racks in the upper and lower thirds of the oven and preheat to 180°C.
Drop the dough by the tablespoonful, 2 inches apart, onto two ungreased baking sheets. Bake, rotating the sheets halfway through, until the cookies are slightly puffed and set on top, about 14 minutes. Let cool on the baking sheet for 5 minutes, then remove from the oven to cool completely. Dust with powdered sugar.
