Ingredients:
- 6 slices bacon, cut into 1 cm pieces
- 1 cup wheat flour
- 1 teaspoon salt, plus a little more
- 1/2 teaspoon ground black pepper, plus more
- 1/4 tsp ground nutmeg
- 1/2 tsp cayenne pepper
- 1/4 tsp baking powder
- 2 beaten eggs
- 1/4 cup milk
- 1/4 cup chopped parsley leaves for garnish
- Additional equipment: aluminum pie pan with a diameter of 23 cm.
Preparation:
- In a large skillet over medium heat, fry the bacon until crisp. Leave the bacon in the skillet along with the rendered fat.
In a large bowl, combine flour, salt, pepper, nutmeg, cayenne pepper, and baking powder. Stir. In a small bowl, whisk the eggs and milk together and add to the dry ingredients. Mix until smooth.
- Bring 6 cups of salted water to a boil in a large saucepan. Use a sharp skewer to poke holes in the bottom of an aluminum pie pan to create a spaetzle maker.
Pass the dough through the holes in the hoppers into boiling water. Stir and cook for 3 minutes, until the dumplings float to the surface. Remove the dumplings and immediately toss them in the pan with the bacon. Season with salt and pepper to taste and sprinkle with parsley. Serve immediately.
