Basmati rice "Bollywood"

Ingredients:

  • 1 tbsp. white basmati rice
  • 1/4 cup chopped apricots
  • 2 tablespoons fresh currants
  • 2 teaspoons olive oil
  • 1 medium onion, chopped
  • 2 tbsp of water
  • 2 teaspoons of salt
  • 1/4 cup toasted almond slices
  • 2 tbsp chopped cilantro leaves

Preparation:

  1. Heat olive oil in a medium saucepan. Add rice and onion. Stir until the rice is coated with oil and translucent around the edges, about 2 minutes. Add water and salt.

    Stir, cover the pan with a lid, reduce the heat to low, and simmer for 20 minutes. Remove from the heat and let stand, covered, for 5 minutes. Stir the rice. Then gently mix it with the remaining ingredients.
