Cucumber and Baked Onion Salad with Mint-Yogurt Dressing topcook.tomathouse.com
Ingredients:
- 2 red onions, peeled and sliced 1 cm thick across
- 3 cucumbers (peeled, halved lengthwise and sliced 1 cm thick)
- Olive oil
- Salt and pepper
- 3 tablespoons fresh oregano
- 1/2 cup crumbled feta cheese
Mint-yogurt dressing:
- 1 cup natural yogurt (place in a fine-mesh sieve for 30 minutes to drain off excess whey)
- 2 tbsp. l. sesame tahini paste
- 1 tbsp. l. olive oil
- 2 tablespoons fresh lemon juice
- 2 finely chopped cloves of garlic
- 1/4 tsp cumin
- 1/4 cup thinly sliced mint
- Salt and freshly ground black pepper
Preparation:
- Preheat the grill. Brush the onion rings with olive oil on both sides and season with salt and pepper to taste. Grill for 2-3 minutes per side, until charred and partially cooked through. Remove from the grill and chop coarsely.
In a medium bowl, combine the onion, cucumber, and oregano, and toss with the mint-yogurt dressing. Season with salt and pepper to taste. Sprinkle with feta cheese.

In a medium bowl, combine all ingredients, season with salt and pepper to taste. Serve immediately.
