Quinoa with garlic, pine nuts and raisins topcook.tomathouse.com
Ingredients:
- 1 cup quinoa, well rinsed
- 1/4 cup pine nuts
- 2 tbsp extra virgin olive oil
- 2 cloves garlic, thinly sliced
- 1/3 cup parsley, finely chopped
- 1/4 cup raisins
- 1 tbsp fresh lemon juice
- Table salt and freshly ground black pepper
Preparation:
- Place the quinoa in a saucepan and gently toast over medium heat, about 2 minutes. Add 1 1/3 cups water (or use low-sodium chicken broth) and bring to a boil. Reduce the heat to medium-low and simmer, covered, until the liquid is absorbed, 10 to 15 minutes. Remove from the heat and let the quinoa sit, covered, for about 2 minutes.
- Meanwhile, toast the pine nuts over medium heat, stirring, until golden brown. After 3 minutes, remove them to a plate. Add the olive oil and garlic to the pan and cook over medium heat, stirring, until golden brown, about 2 minutes. Remove the garlic to a plate, leaving the oil in the pan.
- Stir the quinoa with a fork. Add the pine nuts, garlic, oil, parsley, raisins, and lemon juice. Season with salt and pepper and toss to combine.
