Ingredients:
- 2 cups of kefir
- Juice of 1/2 lemon (if the kefir is sour, you can omit the lemon juice)
- 1 tbsp hot chili sauce
- 1/2 onion, sliced
- 5 sprigs of fresh thyme
- 3 cloves of garlic, crushed into puree
- Coarse salt and freshly ground black pepper
- 1 whole chicken (1350 g), divided into 8 pieces, rinsed and dried
- 2 cups crushed cornflakes
- 3/4 tbsp. grated parmesan cheese
- 2 tsp fresh chopped thyme
Preparation:
- Preheat oven to 200C (400F). Place a wire rack on a baking sheet and spray with non-stick spray.
- Marinate the chicken: In a large bowl, combine kefir, lemon juice, hot sauce, onion, thyme, garlic, salt, and pepper. Add the chicken pieces and coat with the mixture. Cover with plastic wrap and marinate in the refrigerator for 3 to 12 hours.
- Make the cheese breading: Mix together cornflakes, Parmesan cheese, and thyme. Season with salt and pepper.
- Remove the chicken from the marinade. After draining, sprinkle the chicken with the cheese flakes and Parmesan mixture, pressing it lightly into the meat.
- Place breaded chicken on a wire rack and spray with cooking spray. Bake for 45 minutes until crisp and golden brown.
Culinary advice: Remove the skin to reduce the calorie content. Marinating chicken in kefir imparts incredible juiciness and flavor.
