Bananas Foster on Texas Toast

Ingredients:

    Batter for croutons:

  • 3 eggs
  • 1/3 cup milk
  • 1/3 cup heavy cream
  • 1/4 tsp natural vanilla extract
  • 1/4 tsp orange liqueur (Grand Marnier is recommended)
  • 1/8 teaspoon sea salt
  • 1/8 tsp ground cinnamon

    Caramel sauce:

  • 1 cup unsalted butter
  • 2 tbsp. brown sugar (tamp down)
  • 1/4 tsp ground cinnamon
  • 1/2 cup orange juice
  • 1/4 cup dark rum
  • 1 tbsp. Creme de banana liqueur (banana cream liqueur)
  • 3 bananas, peeled and sliced ​​into rounds
  • 6 thick slices of bread, preferably French or Texas toast

Preparation:

  1. Batter: In a large bowl, mix all ingredients until smooth.
  2. Sauce: In a saucepan over medium-high heat, melt the butter, then add the brown sugar. Stir until the sugar dissolves. Add the cinnamon and orange juice and bring to a boil. Remove the pan from the heat, pour in the rum and banana liqueur, if using, and return it to the heat. Brush the sides of the pan with water using a pastry brush. Remove from the heat.
  3. Pour 1/4 cup of caramel sauce into a small saucepan and add the bananas. Heat over high heat. Keep warm.
  4. Toast: Heat a grill pan or nonstick skillet over high heat. Dip the bread slices in the batter, then place them on the pan, turning them over after 2 minutes. Pour 1/4 cup of caramel sauce onto each serving plate and top with a crouton. Arrange the bananas on the bread and drizzle with more caramel sauce.
