Ingredients:
- 1 package of double-cream chocolate sandwich cookies (430g), such as Oreo Double Stuf
- 220 g of cream cheese, room temperature
- 2 tbsp. whole milk
- 110 g (8 tbsp) unsalted butter, room temperature
- 2 cups powdered sugar
- Coarse salt
- 170 g marshmallows (about 24 pcs.)
- Orange gel food coloring
- Gummy spiders for decoration
Preparation:
- Scrape the cream filling from the cookies into a small bowl and set aside. Transfer the cookies to a food processor and pulse until fine crumbs form, about 20 pulses. Add the cream cheese and pulse, scraping down the sides of the bowl to distribute evenly, until a thick dough forms, about 15 pulses. Add 1 tablespoon of milk if the mixture is too thick (it should be the consistency of sugar cookie dough).
- Place the dough on a large piece of plastic wrap on a work surface. Cover with another large piece of plastic wrap and roll it out with a rolling pin into a 22x32 cm rectangle. Set aside.
- In the same food processor, combine the butter and cream cheese filling and process until smooth, about 30 seconds. Add 1 cup of powdered sugar and process until fully incorporated. Add the remaining 1 cup of powdered sugar and a pinch of salt and process until fully incorporated. Add the remaining 1 tablespoon of milk and process until the cream is light and fluffy, about 30 seconds.
- Place the dough rectangle with the shorter side facing you. Remove the plastic wrap and spread the buttercream evenly to the edges on three sides of the rectangle, leaving a 1 cm border on your side.
- Roll the roll from the edge opposite you, using the plastic wrap as a guide, and place it seam-side down. Wrap the roll tightly in plastic wrap and fold the ends over the sides. Refrigerate for at least 4 hours or overnight to set.
- When ready to serve, unroll the roll and transfer it to a serving platter.
- In a large microwave-safe bowl, combine the marshmallows with 12 drops of orange gel food coloring and microwave until softened, about 1 minute. Stir well to ensure an even color, then let cool slightly, about 1 minute. Put on disposable gloves and dip your fingers into the melted marshmallows. Pull out a thin, gossamer-thin thread and cover the roll with it. While the web is still sticky, decorate it with gummy spiders. Let it set for about 10 minutes. Slice and serve immediately.
