Sweet and spicy smoked turkey with smoked gravy

Ingredients:

    Turkey

  • 0.5 cup sweet barbecue spice mix
  • 1 turkey weighing 4.5-5.5 kg, butterflyed
  • 12 medium carrots, peeled
  • 350 g sweet mini peppers or Melrose sweet peppers
  • 2 cups turkey or chicken broth
  • 2 tablespoons butter
  • 2 tbsp. premium flour
  • Special equipment: disposable aluminum molds; smoking chips

    Sweet BBQ Spice Blend

  • 1 tbsp. sugar turbinado
  • 0.5 cup granulated sugar
  • 0.5 cup coarse salt
  • 3 tablespoons chili powder
  • 3 tbsp. l. smoked paprika
  • 2 tablespoons granulated garlic
  • 1 tbsp onion powder
  • 1.5 tsp cayenne pepper
  • 1 tsp ground cumin
  • 1 teaspoon freshly ground black pepper

Preparation:

  1. Rub the turkey with the spice mixture on both sides. Transfer it breast-side up to a disposable aluminum roasting pan and refrigerate, uncovered, overnight to allow the spices to dry.
  2. Let the turkey sit at room temperature for 1 hour before roasting. Add the carrots and peppers to the pan and place the turkey on the rack on top of the vegetables.
  3. Preheat a gas grill, charcoal grill, or smoker to 350°F (175°C). If you have a gas or charcoal grill, set up a smoker or a small disposable aluminum pan filled with wood chips. Once smoke begins to appear, place the turkey and vegetables on the grill, cover, and smoke for 1 hour.
  4. After 1 hour, turn the turkey over and add the broth to the pan with the vegetables. Continue smoking until the internal temperature of the breast reaches 165°F (71°C) and the internal temperature of the thigh reaches 165°F (74°C), another 1 to 1.5 hours.
  5. Let the turkey rest for 45 minutes to an hour while you prepare the gravy. Remove the carrots and peppers from the roasting pan and set aside. Pour the juices from the roasting pan into a fat separator.
  6. To make the gravy, melt the butter in a small saucepan over medium heat. Add the flour and stir well. Slowly add the skimmed juices from the pan and stir. Simmer until the desired consistency is reached. Taste the gravy and add salt if necessary.
  7. Slice the turkey and serve with carrots, peppers and gravy.

    Sweet BBQ Spice Blend:

    In a bowl, combine turbinado sugar, granulated sugar, salt, chili pepper, paprika, granulated garlic, onion powder, cayenne pepper, cumin, and black pepper. Store in a tightly sealed container.
