Grilled Peach Salad with Grapefruit Dressing topcook.tomathouse.com
Ingredients:
- 1 grapefruit
- 2 large peaches, each cut into 8 pieces
- 1 tbsp. honey
- 3 tbsp grapeseed oil + extra for greasing
- Salt and freshly ground black pepper
- 4 cups arugula
- 3 green onions, thinly sliced
Preparation:
- Preheat grill to medium heat.
- Peel and slice the grapefruit over a small bowl to collect all the juice. Once you've removed all the segments from the membranes, squeeze the remaining juice from the membranes into the same bowl. Place the pieces in a separate bowl.
- Cut the peaches into 8 pieces and brush with oil. Grill for 5 minutes, until slightly softened.
- Add honey, oil, salt, and black pepper to a bowl with the grapefruit juice and toss to combine. Place the arugula, grapefruit, grilled peaches, and chopped green onions in a large salad bowl, then add the dressing. Toss well and serve.
