Hot Hawaiian BBQ Sauce

Ingredients:

  • 0.5 cups canned pineapple chunks (with liquid)
  • Freshly ground black pepper
  • 1/2 cup store-bought barbecue sauce (such as Uncle Ben's)
  • 1/4 cup gochujang paste
  • 2 tablespoons apple cider vinegar
  • 1/4 cup finely chopped fresh cilantro

Preparation:

  1. Place the pineapple and plenty of coarsely ground black pepper in a medium saucepan. Cook over medium heat, stirring frequently, until the pineapple begins to bubble and begins to brown slightly, about 20 minutes.
  2. Add the barbecue sauce, gochujang, and vinegar and stir. If the sauce is too thin, simmer until it thickens; if it is too thick, add a little water, no more than 1/4 cup.
  3. Let the sauce cool to room temperature and add cilantro.
