Hot Pineapple Glazed Bacon

Ingredients:

  • 0.5 cup dark brown sugar
  • 110 g canned pineapple chunks, drained
  • 1/4 tbsp. sambal-olek
  • 12 thick strips of bacon
  • Coarsely ground black pepper

Preparation:

  1. Preheat oven to 200°C.
  2. Line a baking sheet with parchment paper, top with bacon strips, and season with pepper. Bake until most of the fat has rendered, 8-10 minutes. Pat the bacon dry with paper towels to remove as much excess fat as possible.
  3. Place a rack on a baking sheet and arrange the bacon on top. Brush the bacon with the glaze.
  4. Bake until the pineapple pieces are golden brown and the bacon is crispy, 2-3 minutes. Let cool for a few minutes before serving.
