Seattle-Style Spicy Hoagie Sandwiches

Ingredients:

  • 220 g whipped cream cheese
  • 1 tablespoon adobo sauce from a jar of chipotle peppers
  • 1 sweet onion, thinly sliced ​​into half rings
  • Olive oil to drizzle
  • 4 smoked Polish sausages, slit lengthwise
  • 4 hoagie buns, halved lengthwise
  • Yellow mustard, for serving

Preparation:

  1. In a medium bowl, combine the cream cheese and adobo sauce. Transfer to a zip-lock plastic bag and refrigerate until ready to use.
  2. Preheat a grill pan over medium-high heat. Add the onion, drizzle with olive oil, and season with salt and pepper. Cook, stirring, until the onion is soft and golden around the edges, 15 to 20 minutes.
  3. Place sausages cut-side down in the skillet and cook, turning once, until grill marks appear, 8 to 10 minutes.
  4. To assemble the sandwiches, place a sausage on the bottom half of each bun.
  5. Remove the cream cheese mixture from the refrigerator and snip a corner off the bag. Pipe cheese into the center of each sausage. Top with fried onions and a little mustard, and cover with the bun tops.
