Whole grain bread in a bread machine

Ingredients:

  • 1 and 2/3 cups + 2 tablespoons warm water (about 25°C)
  • 2 tablespoons of vegetable oil
  • 1/4 cup brown sugar
  • 1/4 cup dry skim milk
  • 2 teaspoons coarse salt
  • 3 cups (340 g) whole wheat flour
  • 1.5 cups (170 g) bread flour
  • 1 packet (7 g) of fast-acting yeast
  • Special equipment: bread maker for baking weighing 900 g.

Preparation:

  1. Place the dough ingredients into the bread machine's baking pan in the following order: water, butter, brown sugar, powdered milk, coarse salt, whole-wheat flour, bread flour, and yeast. Set the machine to bake a 900g loaf of whole-wheat bread (or just the dough, depending on your machine model) and start the cycle (see Note).
  2. Once the cycle is complete, immediately remove the bread from the pan and let it cool completely on a wire rack.

    Settings, cycles, and cooking times may vary depending on your bread maker model. Always follow the manufacturer's instructions. This recipe was tested on a Cuisinart CBK-110 automatic bread maker.
