Ingredients:
- 1 cup non-alcoholic apple cider
- 1 cup firmly packed dark brown sugar
- 0.5 cups bourbon
- 2 teaspoons pumpkin pie spice mix
- A small pinch of ground cloves
- 3 tablespoons unsalted butter
- 1 cooked ham, spiral cut, weighing 3-4.5 kg.
Preparation:
- Preheat oven to 160°C.
- To make the glaze, combine the apple cider, brown sugar, bourbon, pumpkin pie spice, and cloves in a saucepan. Turn the heat to medium-high and cook, stirring, until the mixture thickens to form a glaze, 10-15 minutes. Add the butter and stir until melted. Taste and season with salt and pepper if needed.
- Lay out plenty of foil on the table to wrap the ham and create a bed for it. Place the ham in the center of the foil and fold the sides up, leaving the top open. Pour half the glaze into the spirals of the ham. Wrap the ham tightly in foil and place it on the rack in a roasting pan. Fill the roasting pan with water, but don't let it touch the bottom of the ham.
- Bake until the internal temperature of the meat reaches approximately 140°F (60°C) (15-20 minutes per pound of weight). Remember, the ham is already cooked, so you just need to heat it through without drying it out.
- Remove the ham and increase the oven temperature to 200°C. Remove the aluminum foil (be careful—hot steam will escape!). Brush the surface of the ham with the remaining glaze, making sure it gets into the slits of the spiral. Return to the oven, uncovered, for another 10-15 minutes. Remove the ham and let it rest for 10 minutes before serving.
