Pizza dough in a bread machine

Ingredients:

    Pizza dough

  • 1 cup warm water (about 30°C)
  • 2 tablespoons extra-virgin olive oil
  • 3 cups premium flour
  • 2 teaspoons of sugar
  • 1.5 tsp coarse salt
  • 1 teaspoon active dry yeast
  • Special equipment: bread maker with a baking weight of 1 kg.

    Pizza

  • 2 tablespoons extra-virgin olive oil
  • 1 cup pizza sauce
  • 450 g semi-skimmed mozzarella, grated (about 4 cups)

Preparation:

  1. Pizza doughPlace the dough ingredients into the bread machine bowl in the following order: water, olive oil, flour, sugar, salt and yeast.

    Set the pizza dough program (or just the dough mode, depending on your oven model) and start the cycle (see Note).
  2. Pizza: Spray a rimmed baking sheet with olive oil.

    Once the dough has risen and the dough cycle has completed (45 to 90 minutes, depending on your oven model), roll the dough out to the same shape and size as the baking sheet and press it into the baking sheet (it's okay if the dough is slightly smaller; it will be easier to stretch once it rests). Let the dough rest, covered, until soft, about 30 minutes.
  3. Preheat oven to 190°C.
  4. Prick the dough all over with a fork, then spread the pizza sauce evenly over the dough. Sprinkle with mozzarella and any other toppings, if using. Bake until the cheese is melted and bubbly, and the edges and crust are golden brown, 30–35 minutes. Let cool for 5 minutes, then slice and serve.

    Settings, cycles, and cooking times may vary depending on your bread maker model. Always follow the manufacturer's instructions. We tested this recipe on a Cuisinart CBK-110 automatic bread maker.
