Portioned omelette with potatoes in an air fryer

Ingredients:

  • 4 large eggs
  • 1/4 cup heavy cream
  • 2/3 cup grated cheddar
  • 1/4 cup diced red bell pepper
  • 1 green onion, thinly sliced
  • 0.5 cup frozen grated potatoes, thawed
  • Special equipment: silicone egg baking mold with 7 compartments, 6-liter air fryer.

Preparation:

  1. Spray the cavities of a silicone egg baking pan with cooking spray. In a large glass measuring cup, whisk together the eggs, cream, and 1/2 teaspoon of salt until no white streaks remain.
  2. Divide the egg mixture, 1/3 cup cheddar, bell pepper, and green onions among the molds. Gently stir the mixture into each cavity with a spoon. Transfer the mold to the air fryer basket and cook at 150°C for 3 minutes.
  3. Meanwhile, in a small bowl, combine the grated potatoes with the remaining 1/3 cup cheddar. Gently sprinkle each egg with the potato and cheese mixture.
  4. Set the air fryer temperature to 150°C and cook for another 12 minutes. The top of each omelet should be golden brown and the eggs should be set. Remove the pan and let rest for 10 minutes before removing. Serve the individual omelets warm.
