Ingredients:
Brownie
- 1 and 3/4 cups premium flour
- 1/4 cup cocoa powder
- 1 teaspoon baking powder
- 1 teaspoon of salt
- 170 g chopped unsweetened chocolate
- 220 g unsalted butter
- 1 and 1/4 cups granulated sugar
- 1 and 1/4 cups light brown sugar
- 1 and 1/4 cups of water
- 4 large eggs
- 2 tsp vanilla extract
Glaze
- 165 g unsalted butter at room temperature
- 3 cups powdered sugar
- 3/4 cup cocoa powder
- 1/4 cup milk + more as needed
- 1 tsp vanilla extract
- 1/4 teaspoon coarse salt
- Candy eyes, green and purple sprinkles for decoration
Preparation:
- Brownie:
Combine flour, cocoa powder, baking powder, and salt in a medium bowl. Place the chocolate in a microwave-safe bowl and microwave in 30-second intervals, stirring, until smooth; let cool slightly.
- Preheat oven to 350°F (175°C). Line a 9 x 13-inch baking sheet with foil, leaving a 2-inch overhang on all sides; spray with cooking spray.
- Combine the butter, granulated sugar, brown sugar, and water in a medium saucepan. Heat over low heat, stirring until the butter melts. Turn off the heat. Stir in the melted chocolate, then the eggs, one at a time, then the vanilla. Fold in the flour mixture until smooth. Spread the batter evenly in the prepared pan.
- Bake until a toothpick inserted into the center of the brownie comes out clean, about 25 minutes. Transfer the pan to a wire rack and let cool for 10 minutes. Carefully remove the brownie from the pan by pulling on the foil tabs; transfer the brownie to a wire rack and let cool completely.
- Meanwhile, prepare the glaze.:
In a large bowl, beat the butter with a mixer on high speed until smooth, about 1 minute. Add the powdered sugar, cocoa powder, milk, vanilla, and salt. Reduce the speed to low and mix until fully incorporated.
- Increase the speed to high and beat until light and fluffy, about 5 minutes, adding an additional 1–2 tablespoons of milk if necessary. Frost the brownies. Cut into squares and decorate with googly eyes and sprinkles.
