Pizza with spinach topcook.tomathouse.com
Ingredients:
- 1 package (400 g) of chilled pizza dough
- 0.5 cup pasta sauce
- 1 teaspoon garlic powder
- 1.5 tsp dried oregano
- 2 teaspoons olive oil
- 1 package (150 g) crumbled goat cheese
- 1.5 cups young spinach, washed
- 1 can (170g) canned artichoke hearts, quartered (save marinade)
- 3/4 cup roasted red bell pepper, cut into 1cm wide strips
- 2 tablespoons chopped black olives
Preparation:
- Preheat oven to 230°C.
- Lightly spray the back of a baking sheet with cooking spray. Roll out the pizza dough onto the sheet.
- In a medium bowl, combine the pasta sauce, garlic powder, and oregano. Using a pastry brush, brush the dough with olive oil. Spread the sauce over the dough, leaving a 1/2-inch border. Sprinkle with goat cheese. Bake for 12–17 minutes.
- In a large bowl, combine the spinach with 2 tablespoons of the artichoke marinade, artichoke hearts, bell pepper strips, and olives. Toss to combine. Remove the pizza from the oven and top with the vegetables. Slice and serve.
