Velvety mashed potatoes

Ingredients:

  • 1 cup heavy cream
  • 4 tablespoons unsalted butter
  • 3 large potatoes, peeled
  • 1/4 cup olive oil, optional
  • Chopped fresh chives for serving

Preparation:

  1. In a small saucepan over medium heat, heat the cream and butter until the butter has melted; set aside.
  2. Place the potatoes in a medium saucepan and cover with cold water. Bring to a boil, then add 1 teaspoon of salt, reduce heat, and simmer for 15–20 minutes, until very tender. Drain.
  3. Press the potatoes through a potato masher or into a large bowl. Stir in the warm cream. Season the mashed potatoes with salt and pepper and drizzle with 1/4 cup olive oil. Sprinkle with green onions.
