Wild rice with citrus topcook.tomathouse.com
Ingredients:
- 2 oranges + 0.5 cup freshly squeezed orange juice
- 1.5 cups wild rice mixture
- 1 tbsp extra-virgin olive oil
- 1/3 cup chopped mint
- 1/3 cup chopped pistachios
Preparation:
- Bring 2.5 cups of water and orange juice to a boil. Add the rice, olive oil, and 1 teaspoon of coarse salt and simmer, covered, until the rice is tender, 20–25 minutes. Let cool slightly, then stir in the mint and pistachios.
- Peel the remaining two oranges and cut segments from the membranes; add to the rice and squeeze the juice from the membranes. Stir and season with salt to taste.
