Grilled Pineapple in Vanilla-Lime Syrup

Ingredients:

  • 1 vanilla bean
  • 220 g dark brown sugar, (about 1 cup), tightly packed
  • 0.5 cup freshly squeezed lime juice
  • A pinch of coarse salt
  • 1 whole pineapple
  • 8 metal skewers, 20 cm each.

Preparation:

  1. Split the vanilla bean lengthwise, scrape out the seeds, and place the bean and seeds in a small saucepan with the brown sugar, lime juice, and salt. Stir everything together and bring the mixture to a boil over medium-high heat, stirring until the sugar dissolves.
  2. Remove from heat and let steep for 2 hours before using. Remove the vanilla bean from the pan. Once the syrup has cooled, pour it into a bottle or other container with a lid. Store in the refrigerator.
  3. Preheat grill to high heat.
  4. Peel and core the pineapple. Cut the pineapple lengthwise into eighths and remove the brown eyes.
  5. Thread the pineapple pieces lengthwise onto skewers. Brush the pineapple with syrup on all sides. Grill until golden brown on all sides, about 4 minutes per side, for a total of 12 minutes, or until the pineapple is tender. Serve with the remaining syrup.
