Chorizo ​​burger

Ingredients:

  • 340 g coarsely ground beef neck meat
  • 340 g coarsely ground sirloin beef steak
  • 2 tsp smoked paprika
  • 1 teaspoon crushed coriander seeds
  • 1 tsp. granulated sugar
  • 1 tsp. brown sugar
  • 1/4 tsp red pepper flakes
  • Thinly sliced ​​roasted red pepper, for serving

Preparation:

  1. Heat a large cast-iron skillet over medium heat for 20 minutes. Meanwhile, carefully combine the two ground meats in a large bowl, being careful not to over-compact the mixture.
  2. In a small bowl, combine the paprika, coriander seeds, garlic, brown sugar, crushed red pepper, and 1/4 teaspoon salt. Sprinkle the spice mixture over the beef and gently toss to distribute evenly. Form the ground beef into four patties, each 2 cm thick and approximately 10 cm long. Season generously with salt and pepper on both sides.
  3. Place the patties in the hot skillet; do not press them with a spatula. Once the patties are cooked and browned on one side, flip them over and cook the other side until golden brown, about 3.5 minutes per side for medium-rare.
  4. Assemble burgers on buns, topping the patties with sliced ​​roasted red peppers and your favorite sauce.
