Preparation 1. Knead a thick dough from flour and water. Cover with a cloth and let rest for 20 minutes. This allows the water to be evenly absorbed, making the dough pliable. 2. Preparation 1. Beat the eggs until shiny, add and mix all the ingredients. Mix thoroughly until very stiff, then let sit for 20 minutes. 2. Roll out the dough on a dusted surface to a thickness of about 1 mm. Roll in starch and roll into a log. Cut the Chinese noodles to the desired width and apply more starch to prevent sticking. Preparation 1. Place the dough ingredients in a large mixer bowl and beat the eggs into the center. 2. Beat on medium speed until smooth, about 3 minutes. Let rest for 20 minutes. 3. Place the dough on a lightly floured surface and knead for 10 minutes until elastic. Cover with a damp towel and let rest for an hour. 4. Divide the dough into 10 pieces. Use a rolling pin or pasta machine to roll each piece to a thickness of 0.5 mm. Roll the dough into a log and cut the noodles into the desired width with a knife or scissors. 5.
