Ingredients:
- 0.6 kg cream cheese Ricotta or Philadelphia
- 5 testicles
- 300-350 g of flour
- 100 g soft butter
- 1.5 tsp baking powder
- 0.3 kg of sugar
- 1.5 tsp lemon zest
- 3 g of vanillin
- 1/4 tsp cardamom
- 1 teaspoon fresh ginger
- 8 tablespoons of fresh milk
- 200 ml cream with 35% fat content
- Powdered sugar
- 1 kg of plums
- 40 g of starch
Preparation:
- The ginger for the pie must be fresh. It must be grated using a fine-hole grater.
- Wash the plums under running water. Cut each plum in half and remove the pit.
- Sift flour and combine with baking powder.
- Beat the egg in a deep saucepan or bowl. Add 200 g of cheese and 100 g of sugar. Mix with a fork.
- Add 1 g of vanillin, cardamom, 1 teaspoon of lemon zest to the resulting mass and mix again.
- Then, add the flour mixed with baking powder in small portions and knead the dough. It should be soft and pliable.
- To make plum pie, we recommend using a 24 x 30 cm baking pan. Line the pan with plastic wrap, making sure the edges are long. This will allow the pie to be easily removed from the pan after baking.
- Place the dough on parchment paper and smooth it out with your hands. Place the prepared plums on top of the dough, with the cut side facing up at a slight angle.
- In another bowl, combine and beat with a mixer the remaining cheese, eggs, sugar, starch, vanilla, ginger, and lemon zest. Then, in a separate bowl, beat the cream thoroughly and fold it into the remaining ingredients with a spatula.
- Pour the resulting mixture onto the dough with plums and smooth it out.
- Place the baking tray with the pie in the oven preheated to 175 degrees for an hour.
- After baking, let the pie cool completely for 5 hours. Then dust with powdered sugar, cut into portions, and serve!
