Toasts with roasted cherry tomatoes and Parmesan yogurt topcook.tomathouse.com
Ingredients:
- 4 cups cherry tomatoes
- 1/4 cup olive oil
- 3 cloves garlic, crushed
- 2 sprigs of fresh thyme
- 4 thick slices of country bread
- 0.5 cup Greek yogurt
- 1/4 tbsp. grated parmesan
- 1 tbsp chopped capers
Preparation:
- Position a rack in the upper third of the oven and preheat the oven to grill mode.
- Place the tomatoes in a large, cold skillet with olive oil, garlic, thyme, and season with salt and black pepper. Cook over medium heat until the tomato skins burst, about 20 minutes.
- Brush the bread with the oil from the skillet and grill, turning occasionally, until golden brown on both sides, about 1 minute. Mix the yogurt with the Parmesan and capers, if using. Season with salt and pepper to taste. Spread the yogurt and Parmesan on the toasts, top with the tomatoes, and sprinkle with freshly ground black pepper.
