Ingredients:
- 1 pork tenderloin, trimmed of fat (about 700 g)
- 1 tbsp. l. peanut butter
- 2 tsp Chinese Five Spice Powder
- 1 tbsp. l. rice vinegar
- 1 teaspoon grated peeled ginger root
- 1 teaspoon mirin
- 1 teaspoon soy sauce
- Juice of half a lime
- 2 tsp. dark sesame oil
- Boiled rice and broccoli, for serving
Preparation:
- Preheat the oven to broil and line a baking sheet with foil. Place the pork on the prepared baking sheet, brush with peanut oil, and sprinkle with five-spice seasoning. Season the pork with salt and pepper. Grill, turning once, until golden brown and an electronic meat thermometer inserted into the thickest part of the tenderloin registers 145°F (63°C), 15 to 20 minutes. Transfer the pork to a cutting board and let rest for 5 minutes.
- Meanwhile, combine the vinegar, ginger, mirin, soy sauce, and lime juice in a small bowl. Add the sesame oil, salt, and pepper. Slice the pork, drizzle with the vinaigrette, and serve with rice and broccoli.
