Iced tea with cucumber and mint topcook.tomathouse.com
Ingredients:
- 4 bags of green tea
- 1 cup mint leaves + 12 sprigs for garnish
- 1 cucumber, unpeeled, cut into 0.3 cm thick circles.
- 1/4 cup honey
Preparation:
- Bring 2 cups of water to a boil in a medium saucepan. Remove from heat and add the tea bags, mint leaves, and half of the cucumber slices. Cover and let steep until the liquid has cooled completely, about 15 minutes.
- Meanwhile, combine honey with 1/4 cup hot water in a measuring cup. Stir until the honey dissolves.
- Fill a large glass pitcher with ice, add 4 sprigs of mint and a few cucumber slices. Strain the cooled tea into the pitcher and discard the mint and cucumber slices. Add the honey mixture and 4 cups of water and stir.
- To serve, pour the tea into tall glasses filled with ice. Garnish each serving with a few mint leaves and a couple of cucumber slices.
