topcook.tomathouse.com

Ingredients:

  • 340 g of prepared chicken sausages (4 pcs.)
  • 1 medium sweet apple, such as Gala, peeled and cut into large strips
  • 1/2 large red onion, thinly sliced (about 2 cups)
  • 1/4 large red cabbage, finely shredded (about 4 cups)
  • 2 tablespoons apple cider vinegar

Preparation:

  1. Heat a large, wide-bottomed saucepan over medium heat. Add 2 teaspoons of neutral, high-heat frying oil, such as canola or grapeseed oil. When the oil begins to shimmer, add the sausage and cook on one side for about 3 minutes. Flip and cook on the other side for 2-3 minutes. Flip and cook on one side, if possible, for about 2 minutes. Remove from the pan.
  2. Add the apple, onion, and cabbage to the pan and stir, scraping up any browned bits with a wooden spoon. Cook, stirring occasionally and reducing the heat as needed, for about 10 minutes. Add the vinegar, 1/4 cup water (or broth for flavor, if using), and 1/4 teaspoon each of salt and black pepper.
  3. Place the sausage on top. Cover and simmer until the fruits and vegetables are tender, about 5 minutes. Slice the sausage into rounds on a cutting board and serve with cabbage.
