Ingredients:

  • 1/4 cup white wine vinegar
  • 1-2 tablespoons Dijon mustard
  • 3/4 cup extra-virgin olive oil

Preparation:

  1. In a small bowl, whisk together the vinegar, mustard, and a generous pinch of salt. Gradually whisk in the olive oil, starting with a few drops and gradually adding the rest in a steady stream until you have a smooth, slightly thick dressing. Stir in a pinch of freshly ground black pepper.
