Ingredients:
Cookie dough topping
- 4 tbsp unsalted butter, plus extra for greasing the pan
- 1 cup premium flour
- 1/4 teaspoon of baking soda
- 1/4 teaspoon fine salt
- 1/3 cup light brown sugar
- 1/3 cup granulated sugar
- 0.5 tsp vanilla extract
- 1 large egg
- 1 cup semi-sweet chocolate chips
Cherry filling
- 6 cups pitted cherries (thaw and drain frozen ones)
- 1/4 cup granulated sugar
- 2 tbsp. premium flour
- 2 tsp vanilla extract
- A pinch of fine salt
- Vanilla ice cream for serving (optional)
Preparation:
- Preheat oven to 175°C. Grease a 22cm square baking pan with butter.
- Cookie dough topping:
Combine flour, baking soda, and salt in a small bowl and set aside. Melt the butter in a medium bowl in the microwave. Cool slightly. Add brown sugar, granulated sugar, vanilla extract, and egg. Stir in the flour mixture and knead until smooth. Stir in the chocolate chips.
- Cherry filling:
In a large bowl, combine the cherries, granulated sugar, flour, vanilla, and salt. Transfer to the prepared baking pan and top with the cookie dough topping. Bake until the filling is hot and bubbly and the topping is golden and crisp, 50-55 minutes. Let cool for a few minutes. Spoon the cobbler into bowls and serve with vanilla ice cream, if desired.
