Ingredients:
- 220 g wide egg noodles
- 2 tbsp. l. olive oil
- 2 raw hot Italian sausages, crumbled
- 1/4 tbsp. grated parmesan
- 2 large eggs, beaten
- 1/4 cup finely chopped fresh parsley
Preparation:
- Cook the noodles in a pot of boiling water according to package instructions. Drain the noodles, setting aside a small amount of water in a separate container.
- Place a large, straight-sided skillet over medium-high heat and add the onion and sausage. Cook, breaking the sausage into pieces, for about 5 minutes. Season with salt and freshly ground black pepper—this is important!
- In a small bowl, whisk together the eggs and Parmesan.
- Add the drained pasta to the pan and stir until coated with the sausage fat. Remove the pan from the heat and add about a spoonful of the pasta water along with the egg and cheese mixture. Stir quickly to coat the pasta. Continue stirring until the water has evaporated slightly and a sauce-like consistency is formed. Add the parsley and stir again. Serve immediately.
