Warm Asparagus Salad

Ingredients:

  • 2 bunches asparagus, trim tough ends and cut stalks diagonally into 4–5cm pieces.
  • 1/3 cup extra-virgin olive oil
  • 1 cup walnuts, coarsely chopped
  • 1 tbsp. minced garlic
  • Ground black pepper
  • 1 tbsp. grated parmesan
  • Juice of 1 lemon

Preparation:

  1. Bring a large saucepan of salted water to a boil and fill a large bowl with ice water.
  2. Place the asparagus in boiling water and cook until tender, 1–2 minutes. Drain and transfer to ice water. Once the asparagus has cooled, drain, pat dry, and transfer to a medium bowl.
  3. Heat oil in a small saucepan over medium heat. Add walnuts and garlic and cook, stirring occasionally, until golden brown, 1–2 minutes. Pour the mixture over the asparagus and toss. Season with salt and pepper to taste.
  4. To serve, transfer the asparagus to a platter and sprinkle with Parmesan cheese. Sprinkle with lemon juice and serve immediately.
