Orange ice cream on a stick topcook.tomathouse.com
Ingredients:
- 4 cups orange juice without pulp (not from concentrate)
- 1/4 cup honey
- 1 cup Greek yogurt 0% fat
- 2 tsp orange zest (about 1 large orange)
- 1.5 tsp pure vanilla extract
- Special equipment: 6 molds with a capacity of 120 ml for ice cream on a stick
Preparation:
- Combine the orange juice and honey in a wide saucepan and bring to a boil over medium-high heat, stirring occasionally. Cook until reduced to 2 cups, about 25 minutes. Let cool completely.
- Combine the orange-honey mixture, yogurt, orange zest, vanilla, and a pinch of salt in a blender and blend until smooth. Pour into six 120 ml molds. Freeze until completely set, at least 4 hours or overnight.
- To serve, remove the ice cream from the freezer, rinse with hot tap water and remove from the mold.
